Seriously Good Vegan Black Bean Burgers
Don't let the "vegan" scare you, these are some tasty black bean burgers!
makes 6 medium sized patties or 4 large.
1 (15 oz) can of organic black beans, drained
2 1/2 Tbsp ground flax seed, mixed with 3 Tbsp water*
1 cup whole wheat bread crumbs
1/2 an onion, finely chopped
2 cloves of garlic, finely chopped
2 tsp cumin (or more if you like it spicy!)
2 tsp corriander
1/2 tsp chipotle chili powder
s/p
1 Tbsp olive oil, plus more for the pan
whatever garnishes tickle your fancy
1. Mash black beans in a large bowl. Add in flax mixture, bread crumbs, onion, garlic, spices, s/p and olive oil, and mix until well combined.
2. Form mixture into patties and place in fridge for 10-15 minutes to chill.
3. Heat 2 Tbsp of olive oil in a pan over medium heat. Arrange patties in a single layer and cook, flipping once, until golden brown and cooked through. This takes about 10 minutes. Transfer to a paper towel lined plate and serve with whatever fixins you want.
*If you do not have flax seed and are not worried about it being vegan, you can use 1 egg as the binder.

This is on my list of recipes to find...I will have to try it out!
ReplyDeleteMade these last night and they were yummy, but packed quite a spicy punch! 2 TBS of cumin seems like a lot--it was a bit overpowering even for me (a cumin lover!).
ReplyDeleteQuick question on the cook time: Is it 10 min./side or 10 min. total?
Teresa... Yikes, 2 TBSP is a lot! It was most likely a typo, intended to be 2 tsp. Thanks for catching that! I usually just measure spices in my hand so its not exactly precise. As far as the cooking time, it totally depends on your stove. For mine it was 5 min per side.
ReplyDeleteHey Amy,
ReplyDeleteCan you use regular chili powder for these? Where do you get the chipotle chili powder?
